Baked Apple Oatmeal [Thank you Jess]

Blogger -- you are so incredibly difficult. Starting a blog was meant to be a ten minute procrastination from Maths. I had always wanted a food blog, but always thought it would be too troublesome. And indeed it was. If it wasn't for Jess, my lovely flatmate, this would have never happened.  I thought I would start with a nice breakfast. I believe in good breakfasts, especially in times like these when I have to study. I have two tests next week and I've been too busy to cook. My lunches have been Boot's 3.29 meal deals and I've been overdosing on cereal bars for dinner. So the only thing I really have time for is breakfast. I need something nice to prep myself for my 12 hour day in the library.
Oats are just wonderful for you. They're high in fibre, they contain antioxidants, they lower your cholesterol levels, reduce blood pressure and so on and so forth. Thus just the idea of consuming such a bowl of concentrated healthiness makes me feel good. The recipe I have below is so incredibly versatile. This one's almost like a healthy oatmeal apple pie. I have some suggestions below as to the possible variations you could do, because there's a bowl of healthy oatmeal out there for everyone.

Prep: 3 min Cook: 35 min Serves: 1 Suitable for: a power breakfast before a busy day
Ingredients
1/2 cup oats
1/2 cup milk
1/2 cup yoghurt
1/4 tsp baking powder
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1 tbsp brown sugar
1 apple, cubed
2 tbsp raisins
2 tbsp sliced almonds
1 tbsp honey

Method
Preheat oven to 180°C. Mix everything together except for the sliced almonds and the honey, and put it in the oven for 35 minutes. In the last 5 minutes, sprinkle with some sliced almonds and some oats. Drizzle with honey and feel healthy.

Variations:
-If I had butter I would've made a little crumble topping. Mix butter with flour, oats and brown sugar until it resembles coarse breadcrumbs and sprinkle on top. It would add that lovely crunch to complement the soft bed of porridge underneath. Alternatively, replace the oats with nuts.

-Different fruits! Instead of diced apples, mix in some mashed bananas (which I did the following morning. Verdict: even better than the apple one. )

    I tried it this morning (duh), with the crumble top. I'm still typing this with my spoon in hand, this is so good. The feeling of being healthy is unbeatable. :)

  3. Although i am little busy nowadays in my arts classes, but still i will try to make this recipe next week. My hubby will also like this. And he is just crazy about oatmeal's and cupcakes. :)
