Matcha Fortune Cookies

Fortune cookies -- make them and they will a) make you very popular amongst your friends and, b) make you lose all sensation on your fingers.  You need to bend and shape them while they're still hot and they are very hot.  I do it with the oven door open, with the silicon mat still in the oven because these cookies cool and harden faster than you can imagine.  And on a side note, did you know that fortune cookies aren't Chinese?  Give a Chinese person a fortune cookie and she/he will wonder why you put paper in her food.
Also, these are very time consuming because you have to make them batch by batch and really just about 3-5 cookies per batch.  Again, they harden faster than... Okay, you can finish the sentence.  But yea, you probably won't have the patience to finish them all in one go, but don't worry, the batter can be put back in the fridge and used on another day.

Makes about 50 cookies
100g egg whites, lightly whisked
100g butter, melted and cooled
100g flour, sifted
100g icing sugar
1 tsp matcha powder

Write out a series of fortunes on small strips of paper and fold them up so that they're 0.5x4cm.  

Whisk all the ingredients together.  Cling film and leave in the fridge for at least 30 minutes.

Preheat the oven to 180C. On a silicon mat, put a tablespoon of the mixture on and, using the back of the spoon, swirl out the mixture to 10cm/4in circles - try to make them very thin.  Alternatively, spread with a spatula using a cut out stencil.

Do about 3 cookies per batch, make sure they're a bit spread out as they will spread.  Bake for about 8-10 minutes or until edges turn brown.

Now, leaving the mat still in the oven, release each cooking with a spatula and leave it there.  Then - bear with me, I know it'll be hot - place a fortune in the middle of the cookie, fold in half, then fold the ends of the half together.  Hold for a few seconds, then put it on the side to cool.  Repeat with remaining cookies.  *you can also try with taking the silicon mat out of the oven but I find that the cookies cool too quickly for that.

Take the silicon mat out, allow to cool, then repeat the process.
