Yea, Nigel and I are just meant to be. I love cardamom. I've never been to India but these cookies taste like India to me. Hot sunny India. It's so difficult to not talk about the weather here, I mean, i finally understand the British obsession with the weather, I'm obsessed. I check the weather forecast every single day. I don't know, it's like I'm purposefully upsetting myself.
So here's a little Indian sunshine to brighten up your day if you're currently experiencing hail or rain or cloudy days.

Ingredients
1/4 cup almonds, toasted and skinned
1 1/3 cup plain flour
1/2 cup cornmeal
1/2 cup caster sugar
pinch of salt
1 egg
3 tbsp olive oil
1 tbsp milk
1 1/2 tsp ground cardamom
Method
Put the almonds in a food processor and pulse until finely ground. Add all the other dry ingredients and pulse a couple of times until mixed. Then add the wet ingredients and pulse until well combined. Press mixture into a greased springform pan. Dust with icing sugar. Bake for 30 minutes. Take out and cut into wedges.

mmm they look really good :) d you know i have no idea who nigel slater is-? errrrrrrrrrrrr btw ive decided what im making tonight .. strawberry risotto with some splashes of harissa ..yum yum!
