Well, I suppose this is more about the presentation. Quite cute aren't they? Instead of your usual mundane crostinis that you serve in cocktail parties, why not put the topping into a mini roulade? You could even stick in a fancy cocktail stick to knock it up a notch.
make use of sandwich bread.
Ingredients
10 slices of whole wheat sandwich toasts
200g cream cheese
1 red pepper, diced
1/2 onion, finely chopped
3 tbsp capers
small bunch parsley, finely chopped.
Method
Fry some onions in butter for about ten minutes before adding the pepper and the capers and fry for an additional ten minutes. Mix with cream cheese and parsley. Season.
Cut off the crusts of the toasts and roll them with a rolling pin to flatten them. Cut them lengthways into two rectangles. With each rectangle, put about 1/2 tbsp of filling on the bottom edge and then roll it up. Put under grill for 5 minutes to crisp the bread.
