Chestnut and Butternut Squash Soup

I think I might be posting nothing but soup recipes for the next two months.  It's just so cold and I don't understand why my heater isn't even remotely warm.  The cold just puts me in a bad mood.  It's ok, soup makes it all better. This is sweet, spicy, light and delicious.

Prep time:  30 min  Cook time: 15 min  Serves: 3  Suitable for:  warming the soul when you're sad

Ingredients
350g chestnuts
500g butternut squash, peeled and cubed
1 small apple, cubed
1 medium onion, finely chopped
1 cup vegetable stock
1 cup milk
1 tsp cinnamon
1/2 tsp nutmeg
1tbsp honey





Method
Peel and cube the butternut squash.  Toss in oil and spread on an even layer on a baking tray.  Cut a cross all the chestnuts and put them on the tray as well.  Put in a preheated oven of 200C and roast for 30 minutes until everything's tender.

Heat oil in a pot and fry onions and apples for 5-10 minutes until the onions are translucent.  Add chestnut and butternut squash, fry for a minute before adding the vegetable stock.  Cover and let simmer for 10 minutes.  Add milk, spices, honey and puree everything.  Add more milk or stock at this point for the consistency you'd like.

Variations
The reason I love soup is that you can do anything you want.  I love soups and stews and salads because it is essentially what I have in the pantry put into a pot.  So experiment :)
