This may be my new favorite thing.
So you know how I make my own peanut butter, almond butter, coconut butter and whatnot? These spreads are my best friends on a vegan diet. Well, they're my best friends normally as well, but anyway. I like to experiment with these butters and as I had pumpkin seeds I went for pumpkin seed butter and oh.my.gawd. It's sensational. Absolutely sensational.
I've also had a revelation - you know of farmers markets and whatnot? Well, there's this cute little market in Edinburgh - the Stockbridge market, which is on every Sunday and they've got an array of stalls from Indian street food to jams to meats to smoked fish. I want to have a stall and sell my nut butters. Nut butters and nut butter baked goods. Cookies made with almond butter, cakes made with hazelnut butter etc etc. AND I can make interesting sandwiches - not just your usually PB & J, but also PB & carrots. And I can have nutella, vanilla peanut butter, cinnamon almond butter. I think it's my calling, guys. What should I call my stall? The Nutter Butter? Buttery Nuts? Nuttery Butts? Happy Nuts? Happy Belly Nuts?

Method
So this is basically the same as my other nut butters. Just put thep seeds in a food processor and process until it becomes a paste, a couple of minutes depending on the strength of your food processor. Add a bit of salt, add a bit of sugar, and enjoy on toast. Or be even more creative.
